Pavelot has long been a source of very good to excellent wines, and that continues to be the case here. Those despairing of the prices for the big-name appellations would do well to take a look at these wines.
The domaine is Jean-Marc et Hugues Pavelot, and the negociant wines are labelled Hugues Pavelot.
Hugues Pavelot
Hugues said that he started the harvest on 29 August (with the red Savigny-les-Beaune), and the first white grapes were picked the following day. Yields were a little below the maximum permitted. The Bourgogne and the village reds are completely destemmed; the premier crus have 15-25% whole clusters . Alcohols are in the 13s and there was no chaptalization.
Since 2021, the domaine has taken in 3 hectares from Domaine Écard, including Peuillets and Serpentières in Savigny, and now has 17 hectares of vines. And there is the burgeoning negociant line, as well.
In 2024, the estate will be certified organic.
All the wines tasted had been racked into stainless steel tanks to await bottling, except for the one white noted as tasted from bottle.
We start with the reds.
2022 Bourgogne
Sumptuous nose, mineral with red fruits. Part from the Pernand-Savigny-Aloxe plain (Les Goutières), with an additional quarter of the total from the Hautes-Côtes de Beaune. The wine is round and full-bodied with red fruits, rust, and minerality. (87-89)

Smooth, round, approachable. Silk texture. Dark fruit, a little black walnut. A little more structure than the Chorey. (88-90)
